    Mackerel in ginger and orange

    4 mackerel fillets
    Juice of 2 oranges
    10ml tomato purée
    5ml (1 teaspoon) fresh ginger - grated
    Black pepper
    Grated rind of 1 lemon
    Mix orange juice, lemon rind ginger, tomato purée and black pepper. Marinate the mackerel fillets in the mixture for at least 3 hours. Bake in a covered container in the marinade at 400°F/200°cgas mark 6 for 20-25 minutes or until the fish is just cooked. Serve hot or cold with the juices poured over the fish, accompany with steamed vegetables
